We’re featuring our first Australian whisky on the blog – part of the World Whisky Flight we did for World Whisky Day last month: the Starward Wine Cask single malt from Melbourne, Victoria.

Bright copper
Nose (what does it smell like?):
Raisins, banana, plum, balsamic vinegar, cloves, toffee nougat

Red berries, cinnamon, savoury spices, plum, dark chocolate
Finish (how does the flavour finish on the palate?):
Long, dry, spicy, tannic, rounded, oily
Background
One of our favourite Aussie whiskies, the Starward Wine Cask Single Malt comes from the New World Whisky Distillery which was founded in 2004 and is located in a former airport hangar in Essendon Fields in Melbourne, Victoria.
Late last year, Diageo’s premium spirits accelerator, Distill Ventures, bought a minority stake in the Melbourne distillery. So while the distillery maintains independence, we’ll start to see Starward establish an international presence.
First released in 2009, Starward single malt whiskies are uniquely Australian. A pioneer of using Australian red wine barrels in whisky production, they also use Australian grain and Melbourne’s constantly changing climate to their advantage.
The Wine Cask edition of the Starward single malt is the distillery’s second expression, aged exclusively in shiraz wine barrels from South Australia’s Barossa Valley – the source of some of our country’s best shiraz wines.
This also won at the recent World Whiskies Awards 2016 for the ‘Best Australian Single Malt Whisky’ so it’s well worth a try!
