Hello from Tokyo Bird!

はじめまして.

If we haven’t yet had the pleasure of meeting you, this is a friendly “hi, how’s it going?” from Jason, Tina, Yoshi, Jay, Chris and the rest of the Tokyo Bird team.

We’re a new Surry Hills small bar and we’re pretty stoked to have been open on Belmore Lane over the past seven weeks or so. This comes after months and months of hard work, on and off site, and a plethora of minor and major delays.

Those who walk past us regularly on Belmore Lane, or live in nearby Commonwealth Street or Lane, can probably attest to this as we’ve had lots of curious faces peer into our little space since August 2014.

We (softly) opened for our first night on Christmas eve, which was interesting timing to say the least. Since then we’ve been having a great old time meeting local residents and businesses,  satisfying the seemingly never-ending thirst of whisky buffs and cocktail connoisseurs, feeding hungry yakitori fiends and of course, having awesome friends, both new and old, come through and even drink us dry one night (you all know who you are!).

Our first several weeks have been pretty awesome fun, despite some very long hours, and we hope to develop and improve on Tokyo Bird every single day from here on out. Please feel free to send us your feedback and suggestions – we’d love to hear it!

Here on our brand new blog we plan to share Tokyo Bird news, stories, specials, videos (eventually!) and insights from the team, as below:

*  Jason, general manager, will provide perspectives on opening a bar and the joy of Bunnings returns, the hospitality industry and managing people, watches, operating on minimal sleep, menus, and the fine art of problem solving;

*  Yoshi, bar manager, will delve into spirits knowledge and proffer cocktail recipes, funny stories from behind the bar, insights into cocktail competitions and skateboarding, and Tokyo Bird’s dynamic cocktail list;

*  Jay, resident handyman (and pretty handy on the yakitori grill!), will talk about building a bar and project management, design, and multitasking;

*  Chris, IT/logistics guru, will go through website and POS management; e-commerce and snowboarding; and

*  Tina, marketing & PR, will float between all things food and booze (and maybe some shoes…); media and social media; and Sydney life.
