09 Sep Announcing Osaka Trading Co. at Tramsheds Harold Park head chef Shota Sato
Further to our announcement last month about our second venue, Osaka Trading Co. at Tramsheds Harold Park (which opens in about three two weeks – eeek!), we are extremely pleased to announce our head chef for the new restaurant: Shota Sato.
Shota was most recently the head chef of Surry Hills restaurant Bar H, where he had been since 2014. He joined Osaka Trading Co. in August 2016 and will be responsible for the kitchen and its modern Japanese menu with a focus on seafood.

Shota’s view of Japanese cuisine is modern and innovative yet classic, and uses a mix of Japanese and Western techniques and fantastic ingredients to showcase his style. He’s a great fit for Osaka Trading Co. and the extended Tokyo Bird team – and we’re stoked to have him on board.
Originally from Chiba Prefecture in Japan, Shota started his hospitality career in izakayas and then hotels Japan. He spent two years travelling around his home country by road before coming to Sydney in 2010 to work in a Japanese restaurant. Shota then worked at The Woods at Four Seasons Hotel in Sydney as head chef before joining Executive Chef Hamish Ingham as head chef over at Bar H in 2014.
Shota’s food philosophy is simple dishes with lots of flavour and texture. His Japanese heritage means he enjoys working with all parts of meat, fish and vegetables, with a minimal waste approach. “I am so excited about the opportunity at Osaka Trading Co., especially the flexibility and responsibility of my own menu,” says Shota. “There is so much planned for Tramsheds and I can’t wait to get in the kitchen there.”
